Unblocking Drains in a Commercial Kitchen: How to Use and How to Prevent

In a commercial kitchen a blocked drain is rarely an accident. It is grease that has been building up for weeks and picked the worst possible day to close off the pipe — usually in the middle of service.

The difference between a home and a restaurant kitchen is volume: where a household sends the occasional scrap down the drain, a kitchen sends litres of grease a day. So the problem is not solved only when it shows up — it is solved on the calendar.

Unblocking: step by step

This guide covers the use of the Mistolin Liquid Drain Unblocker [1000ML].

  1. Identify where the blockage is — sink, wash-up sink, floor drain or grease trap. Treating the drain when the problem is in the trap wastes product and time.
  2. Apply the product directly into the drain — around 250 ml for light blockages, up to 500 ml for established ones.
  3. Leave it to work for 15 to 30 minutes — that is the time the product needs to dissolve the residue. Forcing it early speeds up nothing and means doing it again.
  4. Rinse with hot water — this flushes the dissolved residue away and stops it settling again further along the pipework.

If the flow does not improve after a second application, the problem is no longer in the drain: it is in the pipework or the grease trap, and that calls for mechanical intervention.

What actually blocks a commercial kitchen

  • Cooled grease. It leaves the fryer as a liquid and solidifies ten metres later, inside the pipe. It is by far the most common cause and the least visible.
  • Fine debris. Whatever goes down the drain unnoticed — flour, sauces, grounds — binds to the grease already deposited and forms the plug.
  • A grease trap with no maintenance. Once it is full it stops retaining and the grease carries on into the network. The blockage shows up downstream, far from the cause.

Prevention: what avoids the emergency call-out

A pipework maintenance plan costs a fraction of a call-out during service, and it is what separates a kitchen that never stops from one that always stops on a Friday night.

  • Preventive application on a fixed cycle — weekly or fortnightly depending on volume, outside service hours and with the drain left unused during the contact time.
  • Never pour hot grease down the drain — it cools further along and settles where nobody can see it. Collect it and dispose of it as waste.
  • Regular cleaning of the grease trap — with a record. Under a HACCP plan, it is one of the points you are asked to demonstrate.
